Berbere
African nomadic spice of the shepherds. From Ethiopia and Eretria, this exotic spice blend may seem foreign to most Western palates.
Featuring rare Ajwain seeds, it's used to season the various lentil stews or wats (a staple dish of the region), or to rub on chicken and lamb.
Try Berbere the next time you make lentil soup and turn the ordinary into something to remember.

Berbere Chicken Burgers with Goat's Cheese
Recipe Ingredients
1 large egg
1/2 tsp garlic powder
2 tsp Nature Kitchen Berbere Spice Blend
1/2 tsp ground black pepper
Pinch of kosher salt
1 1/2 lbs boneless, skinless chicken breasts, cut into large chunks
2 oz prosciutto
4 burger buns
4 oz log chevre (goats cheese)
Recipe Instructions
1. Heat the grill to medium and oil the grates or coat them with cooking spray. In a large bowl, whisk together the egg, garlic powder, berbere, black pepper, and salt and set aside.
2. In a food processor, combine the chicken and prosciutto. Pulse until the meat is well chopped but still chunky (about 10 seconds total). Scrape the sides of the bowl and pulse again if any large pieces remain unchopped. Transfer the meat to the bowl with the egg mixture, then mix well. Form the meat into 4 loose patties. They will be moist and won't hold together very well.
3. Use a spatula to carefully place the burgers onto the grill and cook, covered, for 4-5 minutes. Flip the burgers (they should be firm enough to move quite easily now) and cook for another 4-5 minutes, or until a thermometer reads 165 degrees F at the center of the burgers.
4. Top each burger with a quarter of the cheese, then serve on the bun.
