Mexican Ranch Rub
Sweet and smokey
INGREDIENTS: PAPRIKA, TOMATO, CUMIN, GARLIC, ONION, OREGANO, CAYENNE PEPPER, BROWN SUGAR, CORIANDER, CINNAMON, ALLSPICE, HICKORY
Mexican Sticky Ribs
2 tablespoons of honey
1 -2 tablespoons of Mexican Ranch Rub.
3 tablespoons of sesame seeds
Ribs for Four
3 tablespoons of cider vinegar
1 tablespoon cooking oil
Place all ingredients including ribs in to a sealed container and shake until mixed evenly
across the ribs.
Leave for a number of hours.... the longer the better.
Place ribs and marinade in a covered casserole dish in a hot oven on Gas mark 8 or the equivalent for electric for 10 minutes or until cooked
Remove the lid and cook for a further ten minutes until the ribs appear slightly blackened, sticky and crispy.
I recommend homemade slaw and lemon pepper rice
